Jamacian Beef Stew
Serve with roast sweet potato, rice, and coleslaw.
ingredients
2 lb stew beef chunks
2 bay leaves
1 tbsp crushed allspice
2 tbsp grated ginger
1 tbsp grated garlic
2 onions diced
2 jalapeños sliced
2 tbsp tomato paste
1 tbsp dried thyme
1 tsp smoked paprika
1 tsp ground turmeric
1 tsp cinnamon
Step 1
Salt & Pepper beef.
Step 2
Heat grapeseed or coconut oil in skillet to shimmer. Brown beef on all sides. Remove to plate.
Step 3
In pan with drippings, sauté onions and jalapeños until soft.
Step 4
Add bay leaves, allspice, ginger, garlic, thyme, paprika, turmeric, cinnamon. Stir. Add tomato paste. Stir until evenly mixed.
Step 5
Add water or stock until desired consistency.
Step 6
Return beef to sauce. Simmer on low until ready, 2-6 hours. Serve with roast sweet potato, coleslaw, and rice.
